Protein Berry OmelettePrint This
- 1 large egg
- 1 tbsp. skimmed milk
- 3 pinches of cinnamon
- 1/2 tsp rapeseed oil
- 100g cottage cheese
- 175g of mixed berries (we like strawberries, blueberries and raspberries)
Mix egg, milk and cinnamon, heat the oil in an 8″(20cm) non stick frying pan and add the mixture. Stir until the base is covered, leave until the base is golden brown, no need to flip the omelette.
Place on a plate and spread the cottage cheese, add the berries, fold and serve.
A wonderful alternative to the usual ham and mushroom. packed with over 20g of protein, this is a great breakfast or snack throughout the day. If your sweet tooth isn't satisfied add a drizzle of honey.
